Tasting Notes: Plum and blackberry sweetness, winey acidity lingering finish

 

This coffee was processed at the Manos Juntas micromill in the Sotara area of Colombia's Cauca region. The coffee was delivered in cherry form to the mill after which it was placed in large hermetic tanks for a 5 day long anaerobic fermentation process. The coffee is then aged in tanks for a further 5 or more days before being sent to the solar dryers for a period of 30 to 40 days.
